Join Chef Michelle Pellegri for a return trip to Lucca as she shares the rustic, timeless flavors of this beloved Tuscan town.
This class is about mastering the techniques behind authentic Tuscan cooking. Chef Michelle guides you through mixing, rolling, and cutting fresh tagliatelle by hand, building a rich, slow-cooked Lucchese-style ragù, and browning butter to bring out the nutty depth in a simple vegetable side. You'll also learn to bake traditional twice-baked cantucci and discover the art of the affogato, Italy's easiest and most elegant dessert. Whether you're dreaming of your next trip to Italy or reliving a past one, you'll leave with the skills to bring the flavors of Tuscany into your own kitchen.
What's on the Menu:
- Tagliatelle al Ragù: The heart of the evening. Learn to make silky homemade tagliatelle from scratch and pair it with a rich Lucchese-style ragù of beef and pork, slow-simmered until deeply flavorful, the way it's been made in Tuscan kitchens for generations.
- Brown Butter Sautéed Spinach with Pecorino: Simple and irresistible. Tender spinach is sautéed in nutty brown butter and finished with sharp, salty Pecorino, proof that the best Italian sides need only a few great ingredients.
- Affogato: Italy's most effortless dessert. Creamy fior di latte gelato is "drowned" in a hot shot of espresso for the perfect balance of cold and hot, sweet and bitter.
- Cantucci with Vin Santo: A true Tuscan tradition. Crunchy, twice-baked almond cantucci are made for dipping into a glass of Vin Santo, the region's sweet dessert wine, and the perfect way to end a meal the Tuscan way.
