Global’s GS series are small and medium-sized Japanese knives for general kitchen use. They are made of Cromova 18, a high quality stainless steel. The 18% Chromium makes them stain resistant while molybdenum and vanadium improve edge retention. Global knives are actually ground on both sides so the blade tapers narrower and narrower right to the edge. The result is a razor sharp blade which remains sharp much longer and requires sharpening less frequently. The handle is hollow and filled with sand to provide proper balance. It has a dimpled or dotted finish which is elegant and makes for a sure grip.
Some of Global’s most user friendly knives are the mid-range utility knives. You will find a utility knife extremely useful for slicing fruits and vegetables, peeling and chopping small items such as mushrooms or shallots and many other kitchen tasks -, even boning a chicken.
Hand wash only with mild dish soap and warm water, rinse well, and dry the knife with a towel immediately. Do not place it in the dishwasher.
