- These handcrafted knives deliver exceptional performance, design and functionality with meticulous attention to detail. They are the only company which uses exclusively domestic materials in the fabrication of their products. The blades feature between 1.3% and 1.5% carbon resulting in a steel that has both superior edge retention as well as the capability of being crafted to a finer edge than other knives.
- The unique appearance of the STEELPORT Cutlery is the result of a Coffee pre-patina which is a (Forced Patina) created by the application of hot coffee which has a PH of about 5 and high temperatures which acts as a catalyst to speed up the process. This creates the unique color of STEELPORT as well as strengthening the metal’s resistance to salts and acids.
- STEELPORT carbon steel is a blend of iron and carbon with the carbon content ranging between 0.5% which creates the softer 30HRC for the spine of the knife and 1.5% carbon combined with a controlled exposure to liquid nitrogen in CRYO that causes the molecules of steel to compress and remain extremely dense with a 65 HRC that is harder than traditional untreated stainless cutlery on all the cutting surfaces.
- What is Rockwell hardness (AKA HRC)? All our knives are rated for how hard they are with what is called the Rockwell rating or measurement (aka HRC) of the steel. HRC is clever in its simplicity, it simply measures how much of a dent/mark a diamond point can make in the metal with a measured amount of weight.
- High carbon steels are rare (hence, more expensive) being harder to process, but when used correctly they can ensure unbelievable and long-lasting sharpness.
- Other contemporary knives use up to 13% Chromium to help prevent rust and discoloration, albeit at the expense of the steel’s ability to hold an edge or be sharpened to acute edges. Carbon blades get sharper and stay sharper.
- These qualities do come at a cost however, carbon steel does require more attention to prevent rust from forming. The general rule of thumb is rinsing the blade and drying it after every use. Over time the STEELPORT cutlery will patina. This is expressed as a discoloration that may be black, gray, blue, or purple. This is a healthy and necessary part of using superior precision high carbon cutlery.
- The appearance of any red rust must be removed immediately to prevent pitting and can be cleared away with simple metal polish or a household kitchen cleanser such as Bar Keepers Friend. Regardless of how you use it the patina will tell the story of each knives history over the years. You can care for the carbon steel blade with the regular application of a neutral food safe oil such as the Cameilla seed oil which is in the STEELPORT Carbon Steel Care kit.
- STEELPORT cutlery has a drop forged full tang wrapped in a resin stabilized natural wood handle made from Oregon Maple also known as the “Mother of the Forest”. STEELPORT uses the burl wood which is noted for it’s individual character that ensures that no two handles are the same
- These wood handles should be treated like you would a natural wooden cutting board. Apply handle wax such as Boo’s Cream to the handle occasionally if it begins to look dry or dull.
