Cloud Forest Cardamom is sweet and tart, with the scent of summer fruits, fresh herbs, and cut grass.  It is grown on a biodynamic, single-estate farm in the high-altitude cloud forests of Guatemala which emphasizes workers’ rights, sustainability, and fair business practices.  The fruit turns yellow as it ripens on the vine, giving it a softer, sweeter flavor than your typical green cardamom.   The whole pods are ground into a coarse powder which, due to the pod husks, also has the benefit of thickening dishes.  If you are using it in a recipe which doesn’t have a long cooking process (such as baked goods), you may wish to grind it into a finer powder texture.
