Cangshan’s Helena series knives are elegant and minimalist with sleek, smooth lines. The slim semi-bolster balances the knife’s full tang and two stain-resistant rivets solidly fasten the ergonomic handle to the blade for a secure, comfortable grip. Each blade is forged from high-alloy German X50CrMoV15 steel and is heat treated through Cangshan’s proprietary ULTRA6 heat treatment that adds strength and durability and a score of 58+/-2 on the Rockwell Hardness Scale. They are sharpened to a precise 16° angle.
The 6” chef’s knife has the versatility of a chef’s knife in a smaller, more agile version of the 8” one, perfect for the user who is more comfortable with a shorter blade.
