Piro is a premium cold pressed extra virgin olive oil, imported fresh from Tuscany under temperature-controlled conditions either by airplane or boat. The olives for Piro are grown on Mount Amiata where the volcanic soil as well as the altitude contribute to the favorable growing conditions. Green, unripe fruit is harvested early, resulting in a low yield extra virgin olive oil with bold flavor and increased levels of antioxidants. The olives are milled within hours of harvesting, immediately filtered, and stored under optimal condition in oxygen-free, temperature-controlled stainless steel tanks, to await an order for bottling. Such care means that your bottle is fresh and flavorful when opened.
The 2022 vintage of Olio Piro has a beautiful bouquet of green olive fruit and fresh-cut green grass. Lingering flavors of green almond, green tea, and herbs have background notes of black pepper and cinnamon. The bold, fresh flavor pairs with vegetables, legumes, seafood, poultry and beef as well as spicy foods. Use it as a condiment for raw vegetables or in a salad or drizzle over vegetables and meat.
