This series is tailored to the user who prefers a classic “pinch grip” - holding the blade just in front of the bolster for best control. These knives are lightweight and exceptionally balanced, to avoid fatigue from long prep sessions. The core of each blade is AUS-10 steel with high performance and the ability to hold a razor-sharp edge. The steel is vacuum-treated and layered in a 3-ply construction with a 60 HRC hardness rating and a 15° double bevel edge. Even with regular, rigorous use, these knives are easy to maintain and sharpen. The handles are crafted from stabilized walnut wood, further strengthened through a vacuum treatment process. The result is a beautiful, durable, moisture-resistant, and naturally contoured for a comfortable, confident grip.
