You'll learn the technique from the ground up — understanding how fat, eggs, and time transform a simple dough into something truly extraordinary. Chef Paul walks you through the science of enriched doughs, proper butter incorporation, and the windowpane test, so you not only know what to do, but why it works. Whether you're new to yeasted baking or looking to level up your skills, this class will give you a genuine command of one of the culinary world's most rewarding and versatile doughs.
What's on the Menu:
- Maritozzi: Rome's most beloved breakfast bun — soft, pillowy brioche filled with lightly sweetened whipped cream. Chef Paul will guide you through shaping and filling these iconic Roman buns, whose simple elegance makes them as irresistible to eat as they are satisfying to make.
- Bostock: The French art of making something extraordinary out of something simple. Sliced brioche is soaked in orange syrup, spread with rich almond frangipane, topped with flaked almonds, and baked until golden and fragrant. Elegant, efficient, and deeply delicious — a masterclass in flavor layering.
- Orange Cardamom Cinnamon Rolls: A warmly spiced, aromatic twist on a classic comfort bake. Bright orange zest and floral cardamom join cinnamon in a filling that transforms a familiar favorite into something genuinely special.
