Santoku is defined as three virtues and this knife is so named since it can be used for meat, fish and vegetables.  This all-purpose Asian style knife has a relative straight edge from heel to tip, supporting the Japanese push cut.  The Kaizen II collection has a beautiful modern design with a Damascus pattern which is dramatically darkened through acid dipping.  The Japanese craftsmanship of this line gives you a work of art that is the ultimate in precision cutting.  The striking black pakkawood handle is so easy to hold with a comfortable grip with stress-free cutting.
